Best Cranberry and Apple Cake

Ingredience

  • 12 oz cranberries (fresh or frozen)

  • 1or2 apples, peeled cored and diced

  • ½ cup brown sugar

  • 1 T grated orange zest (lemon will work as well)

  • 1 t ground cinnamon

  • 2 large eggs (room temperature)

  • 1 cup granulated sugar

  • ½ cup melted and cooled butter

  • 1 t vanilla extract

  • ¼ cup sour cream (or unsweetened yogurt)

  • 1 cup all purpose flour

  • ¼ t salt

  1. Preheat oven to 325 degrees. In a medium bowl, combine the cranberries, apple, brown sugar, orange zest, and cinnamon. Set aside

  2. In the bowl of electric mixer beat the eggs on medium-high for 2 minutes.

  3. On medium speed mix in sugar, butter, vanilla and sour cream until combined.

  4. On low speed slowly add the flour and salt.

  5. Spoon Cranberry apple mixture into a 10 inch pie plate or 9x9 pan.

  6. Spoon the batter over the fruit mixture and spread evenly over the fruit mixture. Sprinkle with cinnamon sugar mixture.

  7. Bake 55-60 minutes, until toothpick comes out clean
