Best Cranberry and Apple Cake
Ingredience
12 oz cranberries (fresh or frozen)
1or2 apples, peeled cored and diced
½ cup brown sugar
1 T grated orange zest (lemon will work as well)
1 t ground cinnamon
2 large eggs (room temperature)
1 cup granulated sugar
½ cup melted and cooled butter
1 t vanilla extract
¼ cup sour cream (or unsweetened yogurt)
1 cup all purpose flour
¼ t salt
Preheat oven to 325 degrees. In a medium bowl, combine the cranberries, apple, brown sugar, orange zest, and cinnamon. Set aside
In the bowl of electric mixer beat the eggs on medium-high for 2 minutes.
On medium speed mix in sugar, butter, vanilla and sour cream until combined.
On low speed slowly add the flour and salt.
Spoon Cranberry apple mixture into a 10 inch pie plate or 9x9 pan.
Spoon the batter over the fruit mixture and spread evenly over the fruit mixture. Sprinkle with cinnamon sugar mixture.
Bake 55-60 minutes, until toothpick comes out clean
